Roasted Chickpeas

Try these for an unusual and healthy snack.

They are quick to make and my 8 taste testers devoured them.

Makes 2 cups

  • 3 tablespoons olive oil
  • 2 cups well-drained chickpeas (cooked or canned)
  • 2 tablespoons minced garlic
  • Salt and pepper to taste


Optional seasonings:

  • Chili powder
  • Garlic powder
  • Onion power
  • Chinese 5 spice seasoning
  • Garam Masala


Preheat oven to 400 degrees. Heat oil over medium heat in a large oven proof skillet or roasting pan.  (It needs to be able to hold the chickpeas in one layer.) When heated, add chickpeas, garlic, salt and pepper. Stir to completely coat. Be sure beans are in one layer and put pan in the oven. Cook for 15-20 minutes, stirring occasionally, until beans begin to brown. Remove from oven and allow to cool slightly. These are good mixed with one of the optional seasonings. They can be served hot or at room temperature.
